Lucas boa noite.

Se você tiver instalado o Openfire com banco externo (SQL nesse caso) você
pode acessar o banco e executar os seguintes comandos:

select * from ofUser

depois

update ofUser
set plainPassword = 'admin',
encryptedPassword = null

Isso vai colocar
Usuario: Admin
senha:admin
